Vienna's famous chocolate cake with a thin layer of apricot jam and a glossy chocolate glaze, served with unsweetened cream.

Method

Beat butter, icing sugar and yolks, then add the chocolate.
Whip whites with sugar and fold in alternately with flour.
Bake at 170°C for an hour and cool.
Split horizontally and brush inside and out with hot jam.
Cook the glaze to 110°C and pour over in one go.
